Class-1 BBQ Experience
Our name (Class-1) is founded on the tradition of one of the proprietor's 13-year military career in the US Army and is the foundation of the-honored craft of the "low and slow" German/Czech style of barbeque the establishment provides to the community.
What separates Class-1 from other BBQ establishments in the area, we are a craft BBQ establishment that greatly values the love, passion, appreciation and commitment we have for the art of BBQ as well as for our customers. We take BBQ seriously, which is evident through the rich, juicy tenderness of our products. And we're just as serious when it comes to our sides. Most of the time, considered an afterthought, our sides have received great reviews and accolades such as our Dirty Greens, Angel Egg Potato Salad, Charro Beans and Brisket Jambalaya just to name a few. We want your experience at Class-1 to be a positively memorable one as we strive to be a well-rounded BBQ establishment.
Herbert “Chuck” Carr (Co-owner and Chief Pit-Master) has a lifetime of experience with wood burning pits, going as far back as his childhood. Barbeque, in the traditional sense will always be in his blood. He and his late son, JT had a vision and common goal when starting Class-1 and that was to put not only put Class-1 Barbeque on the map but to introduce the top of Texas to Central Texas Craft Style BBQ and to make Class-1 a recognized Ambassador of the craft. And so far...they've done just that having had an article published in the Texas Monthly. The first of many accomplishments to come.
My earliest recollection of the craft is as a kid growing up in western Oklahoma. I remember waking up on certain summer Saturday mornings and before I could make it to the kitchen, I could smell the spices my father used to make his meat rubs. I can still smell it to this day and the thought of it is nostalgic. My father was a Pit-Master in his own right. He was a perfectionist and everything he did, whether on his job or at home was done meticulously and with precision. I can still see him out in our back yard at our home in Clinton, splitting wood whether it be pecan, oak or hickory and getting it all ready to start the fire of his brick pit. The pit my father used was very similar to the pits used at Louie Mueller in Taylor, TX and Smitty’s Market in Lockhart, TX. Those pits are well over 123 years old and are very similar to my father’s pit back home. My father was a wood, fire and smoke kind of man and that’s where (unbeknownst to me) my training began. By watching my father and learning from him, I was unknowingly developing a love and appreciation for a craft that has now become deeply embedded in me. Every time I bring a fire to life in one of my pits, I also bring to life the memory of my Father and knowing that he is right there looking over my shoulder, ensuring that I’m doing it right…every time.
Maria Jimenez-Carr is a true “ambidextrous”, when it comes to cooking. Her wide range of cooking styles vary from Mediterranean styles of cooking, influenced while visiting Israel, Egypt and Greece to Hispanic styles, which she learned from her mother and grandmother and soul-food styles which she learned from her Mother-in-law and close family friends. Her recipes along with daughter Jocelyns recipes (aka Butta) have the potential to make Class-1 BBQ a restaurant within a restaurant. The love and passion that she has for cooking is always on display in her home at family gatherings and for her co-workers at Northwest Texas Hospital. Her scratch-made deserts (Deserts by Chula) are tantalizing and absolutely delicious and at the same time, addicting. Both mother and daughter have a gift for the craft and art of cooking that is always on display at Class-1 BBQ for the customers to enjoy.
Class-1 Barbeque, LLC has brought Central Texas Craft Style BBQ to the top of Texas region with intrigue and with a modern and family friendly setting.
